Scalloped Potatoes


Ingredients

4 cupsthinly sliced potatoes
3 tbspbutter
3 tbspflour
1 1⁄2 cupsmilk
1 tspsalt
1 dashcayenne pepper
1 cupgrated sharp cheddar cheese
1⁄2 cupgrated cheese, to sprinkle on top
paprika

Preparation

  1. In a small sauce pan, melt the butter, blend in the flour and let sit for a minute.
  2. While stirring with a whisk, add all of the cold milk and season with salt and cayenne.
  3. Cook on low until smooth and boiling, stirring occasionally.
  4. Reduce heat and stir in the cheese.
  5. Put half of the sliced potatoes in a lightly greased one quart casserole dish.
  6. Pour half of the cheese sauce over the potatoes.
  7. Repeat with the second layer of potatoes and cheese sauce and sprinkle the remaining cheese on top.
  8. Top with some paprika for color and bake uncovered for about 1 hour at 350°F.
