Slow Cooker Butter Chicken

1 poundboneless-skinless chicken breast (cut into 1 inch pieces)
2 tbspunsalted butter
1white onion (finely chopped)
3garlic cloves (minced)
1 tspground ginger
2 tspcurry powder
1 tspground cumin
1 tspchili powder
1 tspground turmeric
1 tspcayenne pepper
¼ tspsalt
1 - 6 oztomato paste
1 - 14 ozcoconut milk (full-fat or non-fat)
½ cupfat-free plain greek yogurt
¼ cuphalf and half
fresh chopped cilantro
rice and/or naan


  1. Place the chopped onion in a large slow cooker that has been sprayed with non-stick cooking spray.
  2. Place the pieces of chicken in the slow cooker over the onion.
  3. In a large mixing bowl, combine minced garlic, tomato paste, spices, coconut milk, yogurt, and half and half. Whisk until well combined. Pour the coconut curry sauce over the chicken. Place butter on top.
  4. Cook on high for 4 hours or on low for 6 to 8 hours or until the onion is tender. Serve hot with rice and/or naan.
