Chocolate Peanut Energy Balls

Preparation Time:



1 cupoatmeal
2/3 cupsweetened coconut flakes
1/2 cuppeanut butter
1/2 cupground flaxseed
1/4 cuphoney
1/4 cupunsweetened cocoa powder
1-2 tablespoonchia seeds (optional)
1 teaspoonvanilla extract


Combine all ingredients in a bowl, mix well. Refrigerate for about half an hour. Roll the mixture into balls, about 1 tbsp per ball. If the mixture is not sticking together well, add a bit more honey or peanut butter. Store in an airtight container in the fridge for quick on the go snacks or breakfast!
