Minestrone Soup


4 tbspbutter
3/4 cuponion, chopped
1/4 cupcelery, chopped
1/2 cupcarrots, chopped
19 ozcannellini beans
1/2 cupcabbage, shredded
14 ozstewed tomatoes
1 tbsptomato paste
1 1/2 cupspotatoes, cubed
4 cupschicken broth
2 clovesgarlic, minced
2 tbspdried parsley
1 tspsalt
1/2 cupelbow macaroni
1/2 cupParmesan, grated


Melt butter in a heavy pot over medium heat. Add onion, celery, carrots, saute.

Add beans, cabbage, tomatoes, tomato paste, potatoes, stock, garlic, parsley and salt to the pot. Bring to boil, cover, reduce heat. Simmer for 1 hour until vegetables are barely tender.

Add pasta, simmer 30 minutes. Season to taste. Serve hot with grated cheese.
