|1 tbsp||butter or oil|
|1/4 cup||butter, melted|
|2 cups||half and half cream|
|2 cups||chicken stock|
|1/2 lb||fresh broccoli|
|1 cup||carrot, julienned|
|8 oz||sharp cheddar, grated|
|salt & pepper|
Sauté the onion in butter or oil.
Cook melted butter and flour over medium heat for 3-5 minutes. Stir constantly as you add the cream.
Add chicken stock, let simmer for 20 minutes.
Add broccoli, carrots and onions. Cook over low heat 20-25 minutes.
Add salt & pepper. Purée in blender, if desired.
Return to heat and add the cheese.
Serve with bread or crackers!
