1 tbsp | butter or oil |
1/2 | onion, chopped |
1/4 cup | butter, melted |
1/4 cup | flour |
2 cups | half and half cream |
2 cups | chicken stock |
1/2 lb | fresh broccoli |
1 cup | carrot, julienned |
8 oz | sharp cheddar, grated |
salt & pepper |
Sauté the onion in butter or oil.
Cook melted butter and flour over medium heat for 3-5 minutes. Stir constantly as you add the cream.
Add chicken stock, let simmer for 20 minutes.
Add broccoli, carrots and onions. Cook over low heat 20-25 minutes.
Add salt & pepper. Purée in blender, if desired.
Return to heat and add the cheese.
Serve with bread or crackers!
