|1/2 cup||onion, chopped|
|16 oz||canned diced tomatoes|
|2 cups||cheddar cheese, grated|
Cut tops off peppers; scoop out and discard the seeds, chop the edible parts of the peppers and set aside.
Cut small holes in the peppers to look like a carved pumpkin. Microwave the peppers for 3-5 minutes in the microwave until softened. Sprinkle the insides of the peppers lightly with salt.
Cook ground beef, onion and chopped pepper in a skillet until the meat is browned and vegetables are tender. Drain excess fat.
Add undrained tomatoes, uncooked rice, and salt and pepper to taste. Bring to boil, reduce heat and cover, let simmer for 20 minutes until rice is tender.
Stir in cheese. Stuff peppers with meat mixture. and place on a baking dish with raised sides.
Bake for 350F for 30 minutes.
