|1 1/4 cups||all purpose flour|
|2 tsp||baking powder|
|1 cup||pumpkin puree|
|2 tbsp||butter, melted|
Combine dry ingredients in a large bowl: flour, sugar, baking powder, spices in a bowl.
Separately, whisk together milk, pumpkin, butter, egg.
Fold wet ingredients into flour mixture.
Melt butter or oil in a skillet over medium heat. Pour small portions of batter into skillet for each pancake. Cook approx. 3 minutes per side, flip when you see bubbles appear.
Serve hot with maple syrup.
