Apple Strudel Muffins


Ingredients

2 cupsall purpose flour
1 tspbaking powder
1/2 tspbaking soda
1/2 tspsalt
1/2 cupbutter, softened
1 cupwhite sugar
2eggs
1 1/4 tspvanilla
1 1/2 cupsapples, chopped (cortland or gala)
1/3 cupbrown sugar
1 tbspall purpose flour
dashcinnamon
1 tbspbutter, softened

Preparation

  1. Preheat oven to 375F. Prepare a muffin pan.
  2. Mix together flour, baking powder, baking soda and salt.
  3. In a separate large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples. Blend in flour mixture.
  4. Spoon the mixture into the muffin pan.
  5. In a small bowl, mix brown sugar, flour and cinnamon. Cut in 1 tbsp butter until the mixture is in coarse crumbs. Sprinkle over the tops of the muffin.
  6. Bake for 20 minutes, until a toothpick comes out clean.
