Chicken Caesar Salad Recipe


1/4partially stale baguette
1/8 cupolive oil and/or melted butter
1 clovegarlic
1 tspdried basil and/or oregano and/or thyme
1 clovegarlic
1/2 tspanchovy paste
1 tbspfreshly squeezed lemon juice
1/2 tspdijon mustard
1/2 tspworcestershire sauce
1/2 cupmayonnaise
1/4 tspsalt
1/4 tspfreshly ground black pepper
1 lbboneless, skinless chicken breasts
1 tspcanola oil
8 cupsromaine lettuce
1/2 cupparmesan cheese
freshly ground pepper



Preheat the oven to 375F. Grate the garlic into the oil. Rip the baguette into small bite-size pieces. In a large bowl, drizzle/brush the pieces with the oil. Add a pinch of salt and the dried herbs and toss to combine. Spread the croutons out on a baking sheet, they should not be touching. Bake for 5 minutes. Remove and toss. Bake for another 5 minutes. They should be browned and slightly hardened.


Whisk together garlic, anchovy paste, lemon juice, mustard and worcestershire in a bowl. Add the mayonnaise and salt and pepper and whisk until well combined.


Preheat a grill to medium-high heat. Rub chicken with canola oil, season with salt and pepper. Grill for 3-4 minutes on each side, there should be no pink left in the middle and the chicken should be browned.

In a large bowl, tear up the lettuce and toss with salad dressing. Top with chicken and sprinkle parmesan cheese.
