- Heat olive oil in a pan on the stove over medium heat.
- Cook onion, peppers and zucchini until softened. Salt and pepper to taste. Add corn and peas and heat for 1-2 minutes/.
- Take 1 tortilla, spread 1/2 cup of cheese and 1/4 of the vegetable mixture. Squeeze lime over the vegetables. Fold over tortilla to form half circle. Grill for 3 minutes on each side in a greased skillet or in a panini press. Repeat for the other 3 tortillas.
- Cut each quesadilla in 4 and serve with salsa, guacamole and sour cream.
