Vegetable Quesadillas



1zucchini, sliced
4bell peppers
1red onion
2 cupscorn
1 cuppeas
2 cupsmozzarella cheese, shredded
1/2lime, in wedges
sour cream
olive oil
salt & pepper


  1. Heat olive oil in a pan on the stove over medium heat.
  2. Cook onion, peppers and zucchini until softened. Salt and pepper to taste. Add corn and peas and heat for 1-2 minutes/.
  3. Take 1 tortilla, spread 1/2 cup of cheese and 1/4 of the vegetable mixture. Squeeze lime over the vegetables. Fold over tortilla to form half circle. Grill for 3 minutes on each side in a greased skillet or in a panini press. Repeat for the other 3 tortillas.
  4. Cut each quesadilla in 4 and serve with salsa, guacamole and sour cream.
