Open-Faced Little Piglet Sandwiches Recipe


Got a picky eater at home? Here’s a clever way to get your little one to eat. Also a fun meal to prepare with your kids.

Ingredients

1English muffin, cut in half (or 2 rice cakes)
1 slicetoasted bread
2 leaveslettuce
2cherry tomatoes, sliced in half
2black olives, sliced in half
1 slicedeli meat (turkey or ham)
2cucumber strips
red & yellow bell peppers

Preparation

  1. Lay English muffin pieces (or rice cakes) on a plate
  2. Ears: cut 4 little triangles out of the toasted bread and place 2 on each side of the English muffins
  3. Hair: place a piece of lettuce in between the ears and tucked under the English muffin
  4. Eyes: place 2 cherry tomato halves on each English muffin. For the center, place a little piece of black olive in the middle of each tomato
  5. Nose: cut 2 thick oval shapes out of the deli meat and place under the eyes. For the nostrils, use 2 pieces of black olives
  6. Smile: place cucumber strip below the nose, curved side down
  7. Bow tie: cut the red pepper into 2 bow tie shapes and place under the English muffins. If you feel like getting fancy, for the center of each bow tie, you can add a piece of yellow bell pepper to make the tie look a little snazzier
