|3 cups||cheddar cheese|
|3/4 cups||green onions|
|4 oz||green chiles (optional)|
|1/4 cup||roasted red peppers|
|1 cup||sour cream|
|1 tbsp||chili powder|
|1 tsp||ground cumin|
|1 tsp||crushed red pepper|
- Boil corn until cooked.
- Cut kernels off cob into bowl. Add cheese, green onions, green chiles, roasted red pepper. Set aside.
- In a separate bowl, combine remaining ingredients: sour cream, mayonnaise, spices. Mix well.
- Combine mixtures and incorporate well. Refrigerate 2 hours, or until ready to serve. Serve with chips and/or bread.
