Watermelon-Feta Skewers Recipe


A fun appetizer to serve at your summertime events.

Ingredients

3 lbwatermelon, cut into 1-inch cubes
24mint leaves
8 ozfeta cheese, cubed
24 leavesbasil
1 tbspolive oil
1 tspsalt
1/2 tspground black pepper
24(3-inch) wooden skewers

Preparation

  1. Lightly toss watermelon and feta in a bowl with the oil, salt and pepper; let stand in the fridge for a half hour.
  2. Thread a piece of watermelon, a mint leaf, a cube of feta, a basil leaf, and top it off with a final piece of watermelon. Place on serving plate and drizzle with remaining marinade. Serve immediately.
