Heat the oven to 160°C (convect 150°C); spread the almonds out to a single layer on a baking tray.
When oven comes up to temperature roast the almonds until lightly golden brown, about 12 minutes, rotating the tray once or twice to roast the almonds evenly.
Let almonds cool.
Mash cheese, crème fraiche and cayenne pepper into paste then stir in the almonds.
Assemble the sandwich in this order: cheese paste, chicory leaves, orange paste, spinach.
