Curried Chicken and Avocado Salad Sandwiches Recipe


Ingredients

1/4 cupreduced fat mayonnaise
2 tspcurry powder
1/4 tspsalt
2 cupscooked chicken breast, cubed
1 mediumavocado, peeled and cubed (3/4 cup)
1/4 cupdried cranberries
2 tbspfresh cilantro, chopped
8 sliceslight whole grain bread
4 leavesred leaf lettuce

Preparation

  1. Mix mayonnaise, curry powder and salt in large bowl until well blended.
  2. Add chicken, avocado, cranberries and cilantro; toss gently to mix.
  3. Divide chicken salad evenly among 4 slices of bread. Top each with a lettuce leaf and remaining slices of bread.
