Chicken Ole Recipe


1 tbspvegetable oil
1 1/4 lbboneless skinless chicken breasts, cut into strips
15 ozwhole kernel corn, drained
15 oztomato sauce
4 ozgreen chiles, undrained and chopped
2 tbspchili powder
1 tsponion powder
4 oztortilla chips
1 cupcheddar cheese, shredded
1/4 cupgreen onions, chopped


  1. Heat oil in large skillet on medium-high heat.
  2. Add chicken; cook and stir 5 minutes or until lightly browned.
  3. Stir in corn, tomato sauce, chiles, chili powder and onion powder. Bring to boil.
  4. Reduce heat to medium-low; cook 10 minutes, stirring occasionally.
  5. To serve, spoon chicken mixture over tortilla chips. Sprinkle with cheese and green onions. Serve with sour cream, if desired.
