Vegetable And Egg Hakka Noodles Recipe

150ghakka noodles
1onion, chopped
2 tspgarlic, crushed
1carrot, julienned
1 cupcabbage, shredded
1/2 - 3/4 cupbeans, julienned
1 smallcapsicum, julienned
1/2 cupspring onion, chopped
1/3 cupcelery, julienned
2eggs, whole
2egg whites
1 tbspgreen chili sauce
1.5-2 tbspsoy sauce
1/2-1 tsppepper powder


  1. Cook the noodles as per packet instructions and keep aside.
  2. Heat oil in a wok or a deep and wide pan.
  3. Scramble the eggs and keep aside.
  4. In the same pan, add more oil if required, add chopped onion and garlic.
  5. When onion becomes soft, add rest of the veggies, except spring onion. Add salt. Cover and cook until the veggies are done.
  6. Once the veggies are done, add pepper powder and the sauces. Mix well and increase the heat to maximum for a min or two, if you like the smoky taste.
  7. Reduce heat to the minimum and add scrambled eggs, spring onion and noodles. Mix well.
  8. Cook on low flame for a min or two. Serve hot.
