Ingredients

200gcaster sugar
3eggs
250mlfresh lemon juice
3lemons, zested
100gunsalted butter, melted

Preparation

  1. Whisk eggs and sugar in a glass or plastic bowl until the mixture is smooth.
  2. Pour lemon juice, lemon and butter in the mixture and stir.
  3. Put this mixture in microwave friendly container and cook with 1 minute intervals. After each 1 minute stir the mixture until the time mixture doesn’t become thick enough to coat the spoon.
  4. Remove the mixture from the microwave and pour it in small jars. Refrigerate the lemon curd for up to 3 weeks.
