Lemon Curd Recipe
|250ml||fresh lemon juice|
|100g||unsalted butter, melted|
- Whisk eggs and sugar in a glass or plastic bowl until the mixture is smooth.
- Pour lemon juice, lemon and butter in the mixture and stir.
- Put this mixture in microwave friendly container and cook with 1 minute intervals. After each 1 minute stir the mixture until the time mixture doesn’t become thick enough to coat the spoon.
- Remove the mixture from the microwave and pour it in small jars. Refrigerate the lemon curd for up to 3 weeks.
