Mango Avocado Salsa With Pan – Seared Salmon Recipe


Ingredients

SALSA:
2 cupsripe mango, diced
1/2 cuponion, chopped
1 cupavocado, diced
1/4 cupfresh coriander leaves, minced
2 tbspextra virgin olive oil
1/4 tspred chili flakes
~1.5 tbsplemon juice
freshly ground black pepper
salt
SALMON:
1,5 lbsfresh salmon filet
freshly ground black pepper
salt
GLAZE:
1 tbspsalted butter
2 tspgarlic, minced
1 tbspparsley/dill leaves, minced

Preparation

For salsa:

  1. Combine all the ingredients for salsa in a bowl. Stir well.
  2. Adjust the seasoning to your preference.

For salmon

  1. Wash and pat dry the salmon nicely with a kitchen tissue.
  2. Season all sides with salt and pepper.
  3. Heat oil in a pan and place the salmon, skin-side-down.
  4. After a few minutes, turn over. Cook it until it's done, as per your liking.

For Butter garlic glaze:

  1. Melt the butter in a saucepan.
  2. Add minced garlic and parsely. Cook for a min or two.
  3. Drizzle the butter garlic glaze (if using) on cooked salmon and serve with salsa.
