Chicken Manchurian Recipe


350gchicken, in medium-size cubes
2egg whites
2 tbspcornflour
2 tbspflour
1 tspsalt
1 tsppepper powder
1 tspvinegar
1.5 tspred chili sauce
2 tbspginger
2 tbspgarlic
1-2green chiles, chopped
2.5 cupschicken stock (water)
1.5 cupswater
2-2.5 tbspsoya sauce
2 tbsptomato ketchup
1.5 tbspred chili sauce
1 tspvinegar
1 tsppepper powder
1/2 tspsugar
1/4 - 1/2 tspsalt
1.5 tbspcornflour
2-3 stalksspring onion, chopped (white and greens separate)


  1. Combine all the ingredients of the batter.
  2. Dip the chicken pieces in egg batter.
  3. Heat oil for deep frying in a pan (refer notes). Once the oil is hot, reduce heat.
  4. Add chicken pieces to the oil and increase the heat to low-medium. Fry the chicken pieces until they turn light golden colour. Make sure you dont fry it too long, otherwise the chicken will harden. Set aside.
  5. In a wok, heat oil. Lightly fry the crushed ginger and garlic.
  6. Add green chiles and white of spring onions. Stir for a few seconds.
  7. Add chicken stock/water. Add all the other ingredients of the sauce except cornflour. Cook for 2-3 minutes.
  8. Add 3 tbsp water to cornflour and make a thick paste.
  9. Add cornflour paste to the sauce and give one boil.
  10. Add fried chicken pieces and cook for 2-3 minutes, till sauce turns slightly thick.
  11. Serve hot garnished with spring onion greens.
