Chickpea and Pomegranate Salad Recipe


Ingredients

1/2 - 3/4 cupchickpeas. cooked
1onion, chopped
1small cucumber, chopped
1/3 cuppomegranate seeds
1 tbspcoriander leaves, chopped
DRESSING:
2 tbspyogurt, whisked
1 tbspmayonnaise (optional)
1 tbspolive oil
salt
pepper

Preparation

  1. In a deep and wide bowl, combine chickpea, onion, cucumber and pomegranate seeds.
  2. Combine whisked yogurt, mayonnaise and olive oil.
  3. Season with salt and pepper.
  4. Drizzle the dressing over the chickpea mix and stir well.
