Coffee Cake Recipe

The base cake is very light and spongy and complements the streusel topping perfectly! The flavour of cinnamon and nuts makes it a perfect choice for the holiday season.


170gbutter, softened
2 cupssugar
3 cupsflour, sifted
4 tspbaking powder
1 tspsalt
1 1/4 cupwhole milk
3egg whites, whole, beaten until stiff

1 1/2 cupbrown sugar
2 tbspcinnamon
1 1/2 cuppecans/walnuts, chopped


  1. Preheat oven to 180 C, 10 mins before baking.
  2. Sift together flour, baking powder, and salt. Beat egg whites and set aside.
  3. Cream butter and sugar. Add flour mixture and milk alternately until combined (start and end with flour). Don't overbeat.
  4. Fold in beaten egg whites with a rubber spatula.
  5. Spread in a well-greased 9 x 13 (or larger) baking pan. A cake pan with higher sides would be best.
  6. In a separate bowl, combine topping ingredients with a pastry cutter/fork until crumbly. Sprinkle all over the top.
  7. Bake for 40 to 45 minutes, or until no longer jiggly.
  8. Serve warm!
