Potatoes with Cumin Seeds (Jeera Aloo) Recipe


Ingredients

450gpotatoes (2 large), cut into medium-size cubes
3onions, chopped
~2 tspginger, crushed/grated
~2 tspgarlic, crushed/grated
2 tspcumin
2tomatoes, chopped
2 tspchili powder
~2.5 tspcoriander powder
1/2 tspturmeric powder
1/4 tsppepper powder
1/2 tspgaram masala
pinchsugar
salt
oil
coriander leaves

Preparation

  1. Boil the potatoes with salt till they are done. Make sure not to overcook them. They should retain the shape.
  2. Heat oil in a pan and crackle cumin.
  3. Add grated/crushed ginger and garlic. Cook 2-3 minutes.
  4. Add chopped onion and cook till they become golden brown in colour.
  5. Add the masala powders and cook till the raw smell goes, 2 - 4 minutes.
  6. Add chopped tomatoes along with salt and sugar, mix well.
  7. Add ¼ cup water and cook. When tomato becomes soft, add cooked potatoes.
  8. Add ¼ cup hot water and combine well. Make sure the potato pieces are coated well with the masala.
  9. Garnish with chopped coriander leaves. Serve hot with rice/roti.
