Spiced Cauliflower and Potatoes Recipe


Ingredients

250gpotatoes, boiled and cubed
500gcauliflower, cooked
2tomatoes, medium-size
2onions
1 tbspginger
1 tbspgarlic
2green chiles
1/2 tspturmeric powder
1 tbspchilli powder (optional)
1 tspgaram masala
1/2 cupcashew paste
1/4 cupmilk
1-2 tbspghee
coriander leaves
salt

Preparation

  1. Heat ghee in a pan & saute greenchilli, ginger & garlic for 3 minutes.
  2. Add the onion and saute till it becomes soft & lightly brown colour.
  3. Add masala powders & stir for 5 minutes.
  4. Add tomatoes and salt and saute till it becomes soft.
  5. Add cashew paste & mix well.
  6. Add cauliflower, potato and coriander leaves. Mix well.
  7. Add milk & simmer for 5 minutes.

Note: Cashew paste: soak 10-15 cashews in ¼ cup hot water for 10 minutes & grind to a smooth paste.
