Decadent Caramels Recipe

These caramels are so simple but take a while to make...but they are well worth the wait!


2 cupswhite sugar
1 cupbrown sugar
1 cuplight corn syrup
2 cupsbutter
1 cupevaporated milk
1 pintheavy whipping cream
2 pinchesfleur de sel
1/2 cupwalnuts (optional)


  1. Line a 9x13 baking sheet with lightly greased parchment paper. Set aside.
  2. Lightly grease a large pot with butter.
  3. Add all ingredients and mix together. Bring to medium heat.
  4. Let the mixture boil for about 40 minutes, until a candy thermometer reaches 248F or solid balls form when dropped into cold water.  Do not stir the mixture as it boils. Instead, swirl the pan to mix.
  5. Once the caramel reaches the desired temperature, pour into the baking dish.
  6. Let the dish cool, and place into the fridge overnight.
  7. Then, cut caramel into bite size pieces and wrap in parchment paper.
