Pork Stew with Tomatoes Recipe

Ingredients

5 clovesgarlic, crushed and chopped
1red onion, halved 4 times
1plump red tomato, halved 4 times
350gpork tenderloin, cut in chunks
1 cupwater
1 cuptomato sauce
2 tbspcooking oil
2 tbspfish sauce
1 tspsalt
3 tspfreshly ground pepper
2 pinchescayenne powder

Preparation

  1. Season the pork with a tbsp of freshly ground pepper.
  2. With a wok or a deep pan, saute the garlic in hot oil.
  3. When the garlic turns golden, fry the pork on all sides.
  4. Season the dish with 1 tbsp fish sauce.
  5. When the pork cooks, put the onions, tomatoes, carrots and potatoes in.
  6. Season the dish with rest of the pepper powder and salt. Cover and let the dish simmer under low heat.
  7. When the onions cook, add water. Allow to boil for 30 minutes. Do not stir.
  8. By this time, the tomatoes should be soft enough to crush. Extract their juices with a ladle against the pork. Add the tomato sauce.
  9. Season once more with fish sauce, then with cayenne powder. Let the dish cook for another 20 minutes.
  10. Add more cayenne for a more spicy dish and serve with hot rice.
