Peanut Ginger Chicken Recipe

A tangy exotic dish that can be prepared quickly. Serve on white rice.


3 tbsppeanut butter
2 tbspsoy sauce
2 tbspvinegar
2 tbspbrown sugar
2 tbspolive oil
2 clovesgarlic, minced
2 tbspginger, chopped and minced
1/2 lbchicken breast (or 2 chicken breasts, cubed)
parsley flakes (or fresh parsley)


  1. In a bowl, prepare the peanut butter sauce: peanut butter, soy sauce, vinegar, brown sugar and olive oil together to get a nice paste.
  2. In the pan, heat olive oil.
  3. Fry the chicken with the ginger and the garlic. Continue until the garlic is cooked.
  4. Add the sauce and stir until it is coated all over. Add about 1/4 of water and mix. Cover it on low heat for 5 minutes.
  5. To keep it saucy, keep adding some water.
  6. Add salt and pepper to your liking.
  7. Remove from heat once cooked.
  8. Serve atop rice, garnished with parsley.
