Chicken Parmesan Pasta Recipe

Fast food doesn't have to mean junk food, this delicious and cheesy dish is perfect after a long day.


12 ozchicken breast, cut into cubes or strips
250gfettuccine (ortagiatelle, or other flat pasta)
2 tbspolive oil
2 tbspbutter
6large mushrooms, sliced
6green onions, chopped, white and green part separated
2 clovesgarlic, minced
1red chili, minced
1/4 cupfresh parsley, finely chopped
1/4 cupfresh grated Parmesan cheese
1/8 cupfresh grated Parmesan cheese
1/4 cupblack olives, roughly chopped
12red or yellow cherry tomatoes, halved
1/4 cupsingle cream


  1. Cook pasta according to package instructions, drain (do not rinse). Set aside.
  2. In a large skillet, sprinkle mushrooms with a little salt and  saute in olive oil for about 5-6 minutes, until golden brown.
  3. Add chili and saute for 2 minutes more.
  4. Add Garlic and saute until garlic is golden.
  5. Add chicken pieces and saute until chicken is opaque and cooked through.
  6. Add cream and stir for about 1 minute.
  7. Stir in the white part of the green onions, reserving the green for later.
  8. Add 1/4 cup of Parmesan cheese. Mix thoroughly. Add butter.
  9. As soon as the butter is melted. add pasta, tomatoes and olives and green onion tops.
  10. Season with salt and pepper and mix thoroughly.
  11. Garnish with 1/8 cup Parmesan and parsley, and serve.
