Indian Rice Chicken Recipe

Add a little kick to your meal and to your day with this Indian rice stir fry!


300gnon-sticky rice
1chicken breast
2-3 clovesgarlic, crushed
1medium cucumber
1medium onion
1red bell pepper
1\2leek (the green part)
1 cansweet corn (optional)
500mLvegetable broth
2 tbspyellow curry powder
vegetable oil


  1. Boil rice, strain and wash with cold water. Set aside.
  2. Boil the chicken breast then cut it into bite size pieces.
  3. Put 2 tbsp of oil in a frying pan, together with 1 tbsp of curry powder, and fry the chicken until crunchy, adding salt and pepper.
  4. Crush the garlic and put it in a bowl; when the chicken is ready, mix it with the garlic. Set aside.
  5. Using the remaining mixture in the pan, add a little more oil, add the vegetables in this order: onion, leek, carrot and pepper.
  6. After they become soft, add the apple and cucumber, and stir.
  7. Add the vegetable broth, another tbsp of curry powder, and the raisins. Let everything simmer until all the liquid has evaporated.
  8. Add salt and pepper.
  9. Mix the vegetables with the rice, add the chicken and a can of corn.
