Shredded Chicken Chimichangas Recipe

Create your own Mexican fiesta with chicken wraps; don't forget to add salsa, sour cream and guacamole!


2 cupsshredded chicken
1 tbspolive oil
1 tspchili powder
1garlic cube (thawed)
1 tspcumin powder
1 tspdried oregano
4flour tortillas
1/2onion, thinly sliced and sauteed in olive oil
mexican cheese, shredded


  1. In a skillet, saute the onion in a small amount of oil, until translucent. Set aside.
  2. Line a baking sheet with foil or parchment. Spray with cooking spray.
  3. Preheat oven to 400 degrees.
  4. Take 1 tortilla and sprinkle with cheese. Then place a couple spoonfuls of chicken and onion to taste. Roll like a burrito, tucking in the sides. Place flap side down, on a baking sheet.
  5. Repeat for all 4 tortillas.
  6. Lightly coat the tops of the chimichangas with extra virgin olive oil for browning.
  7. Bake in oven at 400 degree for 10 mins, then flip and bake another 10 minutes.
  8. Serve with guacamole, salsa, tomatoes, and/or sour cream, as desired.
