Alfredo Recipe

VEGETARIAN, UNDER 30 MINUTES - A classic rich and creamy alfredo recipe that tastes delicious solo or as a side dish.


1 lbpasta (fettuccine)
1/2 lbparmigiano-reggiano, finely grated
1/2 lbunsalted butter
3/4 - 1 cupreserved pasta water


  1. Boil the pasta in salted water until al dente.
  2. Drain and reserve 3/4-1 cup pasta water for the sauce.
  3. Bring butter and pasta water to a boil in a saucepan or large skillet.
  4. Add pasta, coat with butter mixture and sprinkle in cheese. Toss with forks or tongs until the mixture of cheese, butter and water forms a velvety sauce.
  5. Serve hot.
