Mango Chicken Recipe


This spicy and tangy recipe really adds a kick to your chicken; serve with rice and vegetables.

Ingredients

2chicken breasts, cleaned and without their skins
1 tbspolive oil
1ripe mango, diced
3 sprigsfresh rosemary
1 tbspwhole black peppercorns
3 clovesgarlic, chopped finely
1 tspwhite sugar
2 tbspbourbon
1/2 teaspoonred chili powder
salt to taste

Preparation

  1. Place the breasts between two plastic sheets and flatten them (~1/4 of an inch thick).
  2. Heat oil in a pan.
  3. Fry the chicken till it starts browning. Take them off the heat (leave oil in pan) and shred into bite-sized pieces using forks.
  4. Reheat the oil and add the garlic, rosemary and mangoes.
  5. Cook on low heat for two minutes or until the mango pieces start to disintegrate.
  6. Add the shredded chicken and peppercorns, sugar, chili powder and bourbon.
  7. Cover and cook for ten minutes.
  8. Season to taste with salt. Stir and leave on medium heat for a minute.
  9. Serve hot with steamed rice or peas.
