Carrot Cake Recipe


Add a little extra flavour to your usual carrot cake with this easy recipe!

Ingredients

2 cupsflour
2 tspbaking soda
1 tspbaking powder
1 tspsalt
2 tspcinnamon
1 3/4 cupswhite sugar
1 cupvegetable oil
3eggs
1 tspvanilla
2 cupscarrot, shredded
1 cupcoconut, flaked
1 cupwalnut, chopped (optional)
8ozcrushed pineapple, drained 

Preparation

  1. Preheat oven to 350*F. Grease and flour a 9"x13" pan.
  2. Mix flour, baking soda, baking powder, salt and cinnamon.
  3. Make a well in the center and add sugar, oil, eggs and vanilla. Mix until smooth.
  4. Mix in carrots, coconut, walnuts and pineapple.
  5. Pour mixture into pan and bake for about 45 minutes,
  6. Frost with cream cheese icing.
