Carrot Cake With Cream Cheese Topping Recipe


Ingredients

4eggs
1 1/2 cupcooking oil
1 1/2 cupfine sugar
500gflour
1 tspsalt
1 tspbaking soda
2 tspcinnamon powder
9carrots (grated)
1 cupwalnut, chopped
250gcream cheese
3 tbspbutter
200gicing sugar
juicefrom 1/4 lemon

Preparation

  1. Cake
  2. Place egg, oil and sugar in mixing bowl. Mix well.
  3. Add flour, baking soda, cinnamon powder and salt. Mix well.
  4. Add in grated carrot and chopped walnut. Incorporate them well.
  5. Line a 8 inch square pan with parchment paper with two sides hanging out.
  6. Pour batter into baking pan.
  7. Bake at 180*C, for 35-40 minutes.
  8. Let cake cool for 5 minutes when done. Icing
  9. Beat cream cheese and butter until light and fluffy.
  10. Pour lemon juice in. Add icing sugar slowly. Mix them well.
  11. Spread the cream cheese mixture in between cake and on top of cake.
  12. Let cool in fridge for about an hour before serving.
