Mississippi Mud Cake Recipe

Treat yourself to a gooey chocolate and marshmallow dessert!


2 cupssugar
½ tspsalt
2 cupsall purpose flour
1 stickunsalted butter
½ cupvegetable oil
½ cupcocoa
¼ cupwater
1 tspbaking soda
½ cupbuttermilk
2 tspvanilla extract
1 bagminiature marshmallows
1 stickunsalted butter, softened
3 tbspcocoa
6 tbspmilk
1 lbconfectioners sugar (1 box)
1 cupchopped pecans (or walnuts)
1 tspvanilla extract


  1. Cake
  2. Preheat oven to 350*F. Grease and flour a 13 x 9 inch baking pan.
  3. Combine sugar, salt and flour in a large mixing bowl.
  4. Bring the butter, oil, 1/2 cup cocoa and water to a boil in a saucepan. Add to flour mixture.
  5. Beat together the eggs, baking soda, buttermilk and vanilla. Add to the chocolate mixture. Mix well.
  6. Pour into prepared pan. Bake for 30 minutes. Remove and cool. Icing
  7. Melt the butter in 2 tbsp cocoa and milk over low heat. Bring the mixture to a boil, then remove from heat.
  8. Stir in confectioners’ sugar.
  9. Slowly mix in the nuts and vanilla. Assemble
  10. Once the cake has cooled slightly, cover it with the miniature marshmallows.
  11. Pour the warm icing over the cake and marshmallows.
  12. Cool cake before serving.
