Shortbread Cookies Recipe

These cookies are perfect for the holiday season; top with icing sugar for an added sweet flavour!


1 cupbutter, softened
3 tbspcornstarch
1/4 cupsugar
1 3/4 cupsflour


  1. In a large bowl, beat butter until fluffy.
  2. Gradually beat in cornstarch, then sugar.
  3. With a wooden spoon, beat in flour, about 1/4 cup at a time.
  4. On a lightly floured surface or pastry cloth, roll out dough to 1/4 inch thickness.
  5. Using a floured, fluted 2 inch round cookie cutter, cut out cookies.
  6. Place cookies on wax lined baking sheets. Prick each cookie 3 times with a fork.
  7. Freeze until firm. (can be stored in this state in freezer bags for up to one month)
  8. Preheat oven to 275*F.
  9. Place frozen cookies in oven for 40-50 minutes or until firm to the touch.
  10. Remove from baking sheet and let cool on racks.
