Goat Cheese and Tomato Phyllo Pizza Recipe

This delicious and easy to make pizza will melt in your mouth.


4-5 sheetsfrozen phyllo dough
2 ozgoat cheese
2tomatoes, thinly sliced
4 tbspolive oil
1 tbsprosemary
1 tbspthyme


  1. Thaw phyllo (if frozen), if not, leave in refrigerator until ready to be used. Once thawed, it must be worked quickly to avoid it drying out.
  2. Preheat oven to 350*F.
  3. Separate  4-5 sheets of phyllo, carefully unrolling it.
  4. On a baking sheet sprinkle 2 tbsp olive oil. Place the phyllo gently onto the sheet, avoiding any wrinkling. Sprinkle the remaining 2 tbsp olive oil over the top of the dough.
  5. Gently roll up each side of the dough about an inch inwards until there is an “edge” to the pizza, and it is a nice rectangle shape.
  6. Crumble the goat cheese over the dough.
  7. Lay the slices of tomato in two rows over the goat cheese.
  8. Sprinkle the top with the rosemary thyme, salt and pepper.
  9. Bake in oven for about 20 minutes, until the dough is a nice golden brown.
  10. Let cool slightly, and serve.
