Egg Aioli With Avocado Sandwich Recipe

This fresh open-face sandwich is healthy and delicious.


1/4 cupmayonnaise
1 tspDijon mustard
pinch of paprika
1/4ripe avocado, sliced
3-4dandelion leaves (or lettuce)
1 slicerye bread
5-8dried cherries
soya butter (optional)


  1. Boil egg and let cool slightly.
  2. Combine mayonnaise, Dijon mustard and paprika in a bowl.
  3. Add boiled egg by cutting it into the mixture.
  4. Toast rye bread.
  5. Lightly spread mustard or soya butter over the bread.
  6. Add dandelion leaves, avocado and egg aioli. Ttop with dried cherries.
