Gingerbread Cake Recipe


This gingerbread cake is a delicious treat, especially during the Christmas holiday season!

Ingredients

8 tbsp (1 stick)unsalted butter, room temperature, plus more for pan
2 1/2 cupsall-purpose flour, plus more for pan
1 cupboiling water
2 tspbaking soda
2 tspground ginger
1 1/2 tspground cinnamon
1/2 tspground cloves
1/2 tspground nutmeg
1/2 tspsalt
2 tspbaking powder
2/3 cuppacked brown sugar
1 cupunsulfured molasses
1 tbspfreshly grated ginger
2large eggs, room temperature, lightly beaten
confectioners' sugar, for dusting

Preparation

  1. Preheat oven to 350*F. Butter and flour a 9-by-13-inch cake pan; set aside.
  2. In a bowl, combine boiling water and baking soda. Set aside.
  3. In a large bowl, sift together flour, ground spices, salt, and baking powder. Set aside.
  4. With an an electric mixer with the paddle attachment, cream butter until light. Beat in brown sugar until fluffy. Beat in molasses and grated ginger, baking-soda mixture, and flour mixture. Beat in eggs.
  5. Pour batter into prepared pan. Bake 30-35 minutes, until toothpick test is clean.
  6. Let cool on a wire rack. Cut into squares; dust with confectioners’ sugar and serve.
