Banana Bread Muffins With Honey Cream Cheese Recipe


This recipe is a delicious crossover between muffins and cupcakes.

Ingredients

3-4ripe bananas, mashed
1/3 cupbutter, melted
1/2 cupsugar
1/2 cupbrown sugar
1egg, beaten
1 tspvanilla extract
2 tspcinnamon
1 tspbaking soda
pinchsalt
1 1/2 cupsall-purpose flour
1 packagecream cheese (8 oz)
1/2 cuphoney
1/2 tbspbutter
1 tspvanilla extract
1 tbspbrown sugar

Preparation

  1. Muffins
  2. Preheat the oven to 350°F (175°C)
  3. With a wooden spoon, mix 1/3 cup butter into the mashed bananas in a large mixing bowl.
  4. Mix in the 1/2 cup sugar, 1/2 cup brown sugar, egg, and vanilla extract.
  5. Sprinkle the baking soda and salt and cinnamon over the mixture and mix in.
  6. Add the flour last, mix.
  7. Pour mixture into butter muffin/cupcake tin.
  8. Bake for 1 hour. Let cool before removing. Honey Cream Cheese
  9. Mix all ingredients until smooth: cream cheese, 1/2 cup honey, 1/2 tbsp butter, 1 tsp vanilla, 1 tbsp brown sugar.
  10. Chill for 1 hour before spreading over muffins.
