Cheesecake Cupcake Recipe

This delicious taste of cheesecake in a bite-sized morcels is great for dinner parties.


2 cupsmochiko (glutinous rice flour)
2 cupswater
1/2 cupsugar
mochiko, for dusting
Strawberries, chopped
Cooking spray or oil


  1. Combine water, mochiko and sugar and stir until smooth.
  2. Coat a microwave safe container with oil spray and pour the batter in a relatively shallow layer.
  3. Cover with an air-tight lid or plastic wrap and microwave ~7 minutes on high, or until done.
  4. Put on mochiko-covered surface and let cool.
  5. Making the mochi: pull off a small piece of dough, roll it into a ball and flatten. Take some strawberry pieces, put them in the center of the round and pinch it closed.
