Guinness Cupcakes With Baileys Buttercream Recipe

This delicious combination of chocolate and Irish cream will melt in your mouth and leave you craving more.


½ cupGuinness Stout
1 stickunsalted butter
3/8 cupunsweetened cocoa powder
1 cupall purpose flour
1 cupsugar
¾ tspbaking soda
3/8 tspsalt
1/3 cupsour cream
4 ozbittersweet chocolate, small shavings
1/3 cupheavy whipping cream
1 tbspbutter at room temperature
1½ cupspowdered sugar
½ stickunsalted butter, at room temperature
3 tbspBaileys Irish Cream (or milk or heavy cream)



  1. Preheat oven to 350°F. Line a muffin pan.
  2. Take unsalted butter and Guinness and let simmer in a small sauce pan.
  3. When mixture is simmering, add cocoa powder and whisk thoroughly. Turn off heat and allow mixture to cool (refrigerate).
  4. In a separate bowl, combine flour, baking soda, salt, and sugar. Whisk.
  5. In a large mixing bowl, combine egg and sour cream. Whisk until the consistency begins to look like cream.
  6. Take Guinness mixture and combine into egg/sour cream mix bowl. Whisk until it has a soft creamy consistency.
  7. Add flour mix, and continue to whisk thoroughly.
  8. Using a large spoon, scoop mix into lined muffin pan. Place in oven and allow to bake.


  1. Bring heavy cream to a simmer in a small sauce pan.
  2. Pour over bittersweet chocolate. Allow to sit for one minute, then whisk.
  3. Add in butter and continue to whisk until consistency becomes creamy.
  4. Pipe filling into center of each cupcake.

Baileys Butter Cream Frosting

  1. Whisk butter.
  2. Add in a few tablespoons of powdered sugar at a time and continue to whisk butter.
  3. Once all the sugar has been used up, add in Baileys and continue to whisk. If cream becomes too thin, add in a few more tablespoons of powdered sugar.
  4. Pipe or spread butter cream over cupcakes and serve.
