|1 cup (250 mL)||plain yogurt|
|1/4 cup (50 mL)||light mayonnaise|
|3 tbsp (45 mL) each||chopped green onion and lemon juice|
|2 tbsp (30 mL)||grainy Dijon mustard|
|2 tbsp (30 mL)||chopped fresh tarragon leaves|
|1 tbsp (15 mL)||liquid honey|
|3/4 tsp (4 mL) each||salt and pepper|
|1 cup (250 mL) each||chopped apple, sliced celery and halved seedless grapes|
|3/4 cup (175 mL)||cubed, aged Cheddar or Gorgonzola cheese|
|1/3 cup (75 mL)||chopped dried apricots or golden raisins|
|1/2 cup (125 mL)||coarsely chopped walnut halves (optional)|
Cook the rotini according to package directions; rinse under cold running water until cooled. Drain well.
Meanwhile, stir the yogurt with the mayonnaise, green onion, lemon juice, mustard, tarragon, honey, salt and pepper in a large bowl.
Toss the dressing with the pasta. Stir in the apple, celery, grapes, Cheddar, walnuts (if using) and apricots until well combined.
