Waldorf Pasta Salad


Ingredients

1 pkg (375 g)CATELLI SMART® Rotini
1 cup (250 mL)plain yogurt
1/4 cup (50 mL)light mayonnaise
3 tbsp (45 mL) eachchopped green onion and lemon juice
2 tbsp (30 mL)grainy Dijon mustard
2 tbsp (30 mL)chopped fresh tarragon leaves
1 tbsp (15 mL)liquid honey
3/4 tsp (4 mL) eachsalt and pepper
1 cup (250 mL) each chopped apple, sliced celery and halved seedless grapes
3/4 cup (175 mL)cubed, aged Cheddar or Gorgonzola cheese
1/3 cup (75 mL)chopped dried apricots or golden raisins
1/2 cup (125 mL)coarsely chopped walnut halves (optional)

Preparation

Cook the rotini according to package directions; rinse under cold running water until cooled. Drain well.

Meanwhile, stir the yogurt with the mayonnaise, green onion, lemon juice, mustard, tarragon, honey, salt and pepper in a large bowl.

Toss the dressing with the pasta. Stir in the apple, celery, grapes, Cheddar, walnuts (if using) and apricots until well combined.
