1 cup (250 mL) | plain yogurt |
1/4 cup (50 mL) | light mayonnaise |
3 tbsp (45 mL) each | chopped green onion and lemon juice |
2 tbsp (30 mL) | grainy Dijon mustard |
2 tbsp (30 mL) | chopped fresh tarragon leaves |
1 tbsp (15 mL) | liquid honey |
3/4 tsp (4 mL) each | salt and pepper |
1 cup (250 mL) each | chopped apple, sliced celery and halved seedless grapes |
3/4 cup (175 mL) | cubed, aged Cheddar or Gorgonzola cheese |
1/3 cup (75 mL) | chopped dried apricots or golden raisins |
1/2 cup (125 mL) | coarsely chopped walnut halves (optional) |
1 | Cook the rotini according to package directions; rinse under cold running water until cooled. Drain well. |
2 | Meanwhile, stir the yogurt with the mayonnaise, green onion, lemon juice, mustard, tarragon, honey, salt and pepper in a large bowl. |
3 | Toss the dressing with the pasta. Stir in the apple, celery, grapes, Cheddar, walnuts (if using) and apricots until well combined. |
