|1 tbsp (15 mL)||olive oil|
|1/4 cup (50 mL)||finely chopped onion|
|1||minced garlic clove|
|4 cups (1 L)||sodium-reduced vegetable broth|
|1 1/2 cups (375 mL)||crushed tomatoes|
|1/2 cup (125 mL)||light (5 %) cream|
|1/3 cup (75 mL)||finely chopped fresh basil leaves|
Heat oil in a large saucepan set over medium heat. Add onion and garlic; sauté for 2 to 3 minutes.
Add vegetable broth; bring to a boil. Then add the stars and simmer for 5 minutes.
Add tomatoes; simmer for 5 minutes. Remove from the heat. Stir in the cream and basil until combined.
Season with salt and pepper to taste.
|Tip||To avoid having unfinished cans to store, purée a 398 mL (14 oz) can of diced tomatoes in the blender or food processor to use in place of the crushed tomatoes.|
