Tomato Basil Soup

Ingredients

2/3 cup (150 mL)CATELLI® Stars
1 tbsp (15 mL)olive oil
1/4 cup (50 mL)finely chopped onion
1minced garlic clove
4 cups (1 L)sodium-reduced vegetable broth
1 1/2 cups (375 mL)crushed tomatoes
1/2 cup (125 mL)light (5 %) cream
1/3 cup (75 mL)finely chopped fresh basil leaves

Preparation

Heat oil in a large saucepan set over medium heat. Add onion and garlic; sauté for 2 to 3 minutes.

Add vegetable broth; bring to a boil. Then add the stars and simmer for 5 minutes.

Add tomatoes; simmer for 5 minutes. Remove from the heat. Stir in the cream and basil until combined.

Season with salt and pepper to taste.

 



TipTo avoid having unfinished cans to store, purée a 398 mL (14 oz) can of diced tomatoes in the blender or food processor to use in place of the crushed tomatoes.
