Smoked Turkey and Swiss Rollups


Ingredients

1 pkg (375 g)cooked CATELLI® HEALTHY HARVEST® Whole Wheat Lasagne (16 noodles)
1 tbsp (15 ml) eachcornstarch and Dijon mustard
1/2 tsp (2 ml) eachsalt and pepper
1/4 cup (50 ml)Egg Creations ™ Original, well shaken
1/4 cup (425 ml)shredded, reduced-fat swiss cheese
1 tbsp (15 ml)Lactantia® Healthy Attitude® Omega 3 Margarine
1 1/2 cup (375 ml)prepared marinara sauce
2 cups (500 ml)2% milk
16 sliceslean smoked turkey or ham
2 cups (500 ml)Green Giant ™, Valley Selections Bean & Carrot Medley, thawed

Preparation

Preheat the oven to 350°F (180°C). Whisk the milk with the cornstarch, mustard, salt and pepper in a microwave-safe bowl. Cook on High in the microwave for 2 to 3 minutes or until steaming. Gradually whisk the eggs into the hot milk. Heat on High for 2 minutes, stirring twice, or until thickened.

Stir in 1 1⁄2 cups (375 ml) of the cheese and the margarine until melted. Reserve 1 1⁄4 cups (300 ml) of the cheese sauce; stir the remaining cheese sauce into the marinara sauce.

Spray a 13- x 9-inch (3 L) baking dish with Mazola® Simplicity ™ Cooking Spray; spread half of the marinara mixture in the bottom. Lay lasagne noodles on work surface; spread each one with a spoonful of the reserved cheese sauce.

Place one slice of turkey (tear to fit the width of the noodles) and a small bunch of vegetables at one short end of each noodle. Roll up the noodles and stand in the baking dish. Drizzle with the remaining marinara mixture.

Bake, covered, for 35 minutes. Uncover and sprinkle with the remaining cheese. Bake for 5 minutes or until the cheese is melted.
