2 tbsp (30 mL) | olive oil |
1/4 cup (50 mL) | chopped fresh parsley or basil |
1 | carrot, zucchini and red pepper, chopped |
1 jar (700 mL) | pasta sauce |
1 | finely chopped onion |
1 | Cook rotini according to package directions. |
2 | Heat oil; sauté onion, carrot, zucchini and pepper until tender. Stir in pasta sauce and parsley; heat through. Season to taste with salt and pepper. |
3 | Serve sauce over rotini; top with cheese, if desired. |
