|2 tbsp (30 mL)||olive oil|
|1/4 cup (50 mL)||chopped fresh parsley or basil|
|1||carrot, zucchini and red pepper, chopped|
|1 jar (700 mL)||pasta sauce|
|1||finely chopped onion|
Cook rotini according to package directions.
|2||Heat oil; sauté onion, carrot, zucchini and pepper until tender. Stir in pasta sauce and parsley; heat through. Season to taste with salt and pepper.|
Serve sauce over rotini; top with cheese, if desired.
