2 tbsp (30 mL) | basil pesto |
1/2 cup (125 mL) | light mayonnaise |
2 tbsp (30 mL) | lemon juice |
1/2 each | red pepper and yellow pepper, grilled and chopped |
1 cup (250 mL) | cooked broccoli florets |
1/2 cup (125 mL) | canned broad beans or chick peas |
1 | Cook rotini according to package directions. Drain and rinse with cold water; drain well. |
2 | Whisk together pesto, mayonnaise and lemon juice. |
3 | Combine cooked rotini, peppers, broccoli, broad beans and pesto dressing. Season to taste with salt and pepper. |
