Rotini Pasta Toss


Ingredients

1/2 pkg (about 185 g)Catelli Bistro® Vegetable Rotini
2 tbsp (30 mL)basil pesto
1/2 cup (125 mL)light mayonnaise
2 tbsp (30 mL)lemon juice
1/2 eachred pepper and yellow pepper, grilled and chopped
1 cup (250 mL)cooked broccoli florets
1/2 cup (125 mL)canned broad beans or chick peas

Preparation

Cook rotini according to package directions. Drain and rinse with cold water; drain well.

Whisk together pesto, mayonnaise and lemon juice.

Combine cooked rotini, peppers, broccoli, broad beans and pesto dressing. Season to taste with salt and pepper.
