1 tbsp (15 mL) | olive oil |
3 oz (85 g) | sliced smoked bacon, chopped |
3 | minced garlic cloves |
1 | finely sliced small red onion |
1 | diced yellow or green zucchini |
½ tsp (2.5 mL) | dried red pepper flakes (optional) |
1 jar (700 mL) | Pasta Sauce |
¼ cup (50 mL) | chopped fresh parsley |
1 | Cook linguine according to package directions. |
2 | Heat oil over medium heat. Add bacon and cook for 2 to 3 minutes. Add garlic, onion, zucchini and red pepper flakes, sauté until vegetables are tender, about 8 to 9 minutes. Stir in pasta sauce and parsley. Simmer over low heat for 2 to 3 minutes. Season to taste with salt and pepper. |
3 | Toss linguine with sauce and serve sprinkled with cheese if desired. |
