Linguine with Bacon and Zucchini


Ingredients

1 pkg (500 g)CATELLI® Linguine
1 tbsp (15 mL)olive oil
3 oz (85 g)sliced smoked bacon, chopped
3minced garlic cloves
1finely sliced small red onion
1diced yellow or green zucchini
 ½ tsp (2.5 mL)dried red pepper flakes (optional)
1 jar (700 mL)Pasta Sauce
¼ cup (50 mL)chopped fresh parsley

Preparation

Cook linguine according to package directions.

Heat oil over medium heat. Add bacon and cook for 2 to 3 minutes. Add garlic, onion, zucchini and red pepper flakes, sauté until vegetables are tender, about 8 to 9 minutes. Stir in pasta sauce and parsley. Simmer over low heat for 2 to 3 minutes. Season to taste with salt and pepper.

Toss linguine with sauce and serve sprinkled with cheese if desired.

Substitute zucchini with 1 cup (250 mL) thawed frozen peas if desired.
