Leek and Feta Cheese Lasagne Roll-Ups


Ingredients

10CATELLI® Lasagne Noodles
2 tbsp (30 mL)vegetable oil
1finely chopped onion
2trimmed and finely chopped leeks
2 cups (500 mL)Ricotta cheese
2 cups (500 mL)crumbled Feta cheese
1beaten egg
1 jar (700 mL)Pasta Sauce

Preparation

Cook lasagne according to package directions.

In saucepan, heat oil; sauté onion and leeks until tender. Remove from heat; cool slightly. Combine Ricotta and Feta cheeses with egg and leek mixture. Spread 1/3 pasta sauce in 13 x 9 inch (3 L) baking dish. Spread about 1/3 cup (75 ml) leek mixture evenly on lasagne noodles; roll up and place seam side down in prepared dish.

Repeat with remaining lasagne and leek mixture. Top with remaining sauce.

Bake, covered at 350°F (180°C) for 30 minutes.

Serve topped with additional crumbled Feta cheese, if desired.
