1 Pkg (375 g) | CATELLI SMART® MACARONI |
¼ cup (60 ml) | extra virgin olive oil |
1 medium | orange pepper, seeded and sliced into 8 wedges |
1 | green zucchini, sliced into strips |
1 | lemon, juiced and strained |
2 | ripe vine tomatoes sliced in half |
½ cup (50 g) | baby Bocconcini cheese (sliced into quarters) |
To taste | Salt and Pepper |
1 | Cook the Catelli Smart® Macaroni according to directions on the package. |
2 | Cut vegetables, toss in olive oil and add a pinch of salt and pepper. Drain well of excess oil and reserve remaining oil. |
3 | Grill vegetables on your BBQ or roast in an oven at 450°F for approximately 7 minutes until coloured and tender. |
4 | Transfer vegetables to a large mixing bowl. |
5 | Mix in cooked pasta with the vegetables, remaining olive oil, chopped parsley and lemon juice to taste. Add sliced Bocconcini cheese and season well with salt and pepper! |

Tips | You can cut the vegetables into bite size pieces after cooking. Taste before serving and readjust with salt and pepper, as the pasta will absorb the salt. |
