|1 Pkg (375 g)||CATELLI SMART® MACARONI|
|¼ cup (60 ml)||extra virgin olive oil|
|1 medium||orange pepper, seeded and sliced into 8 wedges|
|1||green zucchini, sliced into strips|
|1||lemon, juiced and strained|
|2||ripe vine tomatoes sliced in half|
|½ cup (50 g)||baby Bocconcini cheese (sliced into quarters)|
|To taste||Salt and Pepper|
Cook the Catelli Smart® Macaroni according to directions on the package.
Cut vegetables, toss in olive oil and add a pinch of salt and pepper. Drain well of excess oil and reserve remaining oil.
Grill vegetables on your BBQ or roast in an oven at 450°F for approximately 7 minutes until coloured and tender.
Transfer vegetables to a large mixing bowl.
Mix in cooked pasta with the vegetables, remaining olive oil, chopped parsley and lemon juice to taste. Add sliced Bocconcini cheese and season well with salt and pepper!

|Tips||You can cut the vegetables into bite size pieces after cooking.|
Taste before serving and readjust with salt and pepper, as the pasta will absorb the salt.
