Grilled Summer Vegetable Salad With Lemon Olive Oil Parsley Vinaigrette

Ingredients

1 Pkg (375 g)CATELLI SMART® MACARONI
¼ cup (60 ml)extra virgin olive oil
1 mediumorange pepper, seeded and sliced into 8 wedges
1green zucchini, sliced into strips
1lemon, juiced and strained
2ripe vine tomatoes sliced in half
½ cup (50 g)baby Bocconcini cheese (sliced into quarters)
To tasteSalt and Pepper

Preparation

Cook the Catelli Smart® Macaroni according to directions on the package.

Cut vegetables, toss in olive oil and add a pinch of salt and pepper. Drain well of excess oil and reserve remaining oil.

Grill vegetables on your BBQ or roast in an oven at 450°F for approximately 7 minutes until coloured and tender.

Transfer vegetables to a large mixing bowl.

Mix in cooked pasta with the vegetables, remaining olive oil, chopped parsley and lemon juice to taste. Add sliced Bocconcini cheese and season well with salt and pepper!

TipsYou can cut the vegetables into bite size pieces after cooking.
Taste before serving and readjust with salt and pepper, as the pasta will absorb the salt.

 

Garnish:¼ cup roughly chopped flat leaf parsley
